Toblerone Cheesecake

AHHHH! MOCK WEEK NEXT WEEK!! EEEPPP! I’m a little bit terrified, i’m not gonna lie. I’m one of the people that puts a lot of pressure on myself, which means i can do never do well enough… which is a bit annoying.

Anyway, no matter, as a cool down, of course I turn to baking, and when my mum is hosting a dinner party, of course I must seize this opportunity and not delay in making a delicious treat to wow her guests.

Honestly, this is one of the best tasting cheesecakes in existence. Don’t believe me? Well i guess you’ll just have to make it yourself and find out, won’t you.

  • 200g Toblerone
  • 100g good-quality dark chocolate
  • 250g cream cheese
  • 200ml whipping cream
  • 250g mascarpone
  • 250g chocolate biscuits, broken into crumbs
  • 100g unsalted butter, melted

  • 200g Toblerone

  1. Grease round 20cm springform cake tin.
  2. Mix biscuit crumbs and butter well, press firmly into base of tin. Place tin into fridge to chill base while making the filling.
  3. Melt Toblerone and dark chocolate in top bowl over a bain-marie until melted and smooth (there may be little bits of nougat in it from the Toblerone).
  4. Whip cream cheese until smooth and creamy. In another bowl whip cream to medium peaks. Add to cream cheese along with mascarpone and combine well. Stir in melted Toblerone and dark chocolate and stir until nice and creamy and chocolatey.
  5. Pour mixture onto the cheesecake base. Chill overnight or for at least 8 hours. Remove from refrigerator and decorate with broken Toblerone pieces.
